    The Peach Melba is a classic dessert, invented in 1892 by the French chef Auguste Escoffier at the Savoy Hotel in London to honor the Australian soprano, Dame Nellie Melba. It combines two favorite fruit: peaches and raspberries usually accompanying vanilla ice cream.

    Our Peach Melba Preserves are a celebration of these fruit and a tribute to Escoffier and his inspiration, Dame Nellie Melba.  Late harvest Peaches from Kokopelli Farms in Palisade Colorado are thinly sliced and macerated in organic cane sugar with raspberries and lemon juice.  It is end of summer in jar, perfect on toast, better yet on vanilla ice cream and best of all straight from the jar on a chilled spoon.
